Ripasso Valpolicella Superiore D.O.C. Le Clivie is an intense red wine made from a delicious combination of Corvina, Corvinone, Rondinella and Croatina native grapes.

| Venification: | The grapes are harvested by hand in mid-September. They are vinified while fresh rather than being left to wither. After removing the stems, the grapes are soft pressed to make Valpolicella. Alcoholic fermentation takes place at a controlled temperature of 18/20°C and lasts 7/10 days. Secondary fermentation on Amarone marc at 18/20°C follows, lasting for fifteen days |
