Venification: | The grapes are hand-picked at the beginning of October, selecting only the best bunches. They are then left to wither naturally in the drying room for three to four months, during which they lose around 30% of their weight. Vinification takes place in January and February, with soft crushing of the destemmed grapes. Temperature-controlled fermentation at 18/21°C lasts about 30 days |
