Description


The Rosso Appassimento Noctiluna Le Clivie is a round, warm wine with soft tannins and excellent persistence.


The grapes are harvested between the end of September and October, after a period of drying in the vineyard of about 15 days. This process yields a concentrated wine with a fruity aroma and a distinct personality.

Grape: Negroamaro and other authorised red berry varieties.
Production zone: Salento, Apulia, Italy
Climate: Mediterranean, characterised by long and often very hot summers.
Venification: After pressing, the mash grapes undergo a maceration period of 8 – 10 days. Then, after soft pressing, only the flower must is fermented, with the help of selected ferments in temperature- controlled tanks at a temperature of 22 - 23°. At the end of fermentation, the new wine is decanted and refined.

Serving Temperature: 18-20°C

Colour Deep ruby red.
Bouquet: The aroma reveals hints of red fruits and jam.
Palate: Intense and complex.
Pairing: Ideal with cold meats and hard cheeses. Accompanies well with roasts and grilled meats.
